Visit us to pick up the freshest cuts of meat —butchered on-site—, speak to our cheesemonger then choose your favourite slabs from Ontario’s top cheesemakers, or sidle up to the counter for a delectable made-to-order sandwich. You can also stay while—our sultry space is designed for those who like to linger over provocative conversations while sipping beautiful bourbons and sampling great charcuterie. 

The Upper Vault in the Cornwall Square’s new Food Hall is a new butcher shop—headed by Chef Luc McCabe—will showcase an exceptional selection of quality cuts from around the world as well as pantry staples including spices.  Until the Butcher’s Vault and Fromagerie is fully built-out and opened in 2024, The Upper Vault will act as its small-but-mighty satellite outlet.

Cornwall foodies will now have a place to find cuts like bavette, skirt steak, picanha, tri-tip, short ribs, tomahawk steaks and access to a dry-aging cabinet.
